Meat Loaf, Beet Loaf, I HATE Meatloaf...

Oh meatloaf.  The good old weeknight standby.  Greasy, impossible to clean pans and lots and lots of ketchup.  Fast forward to the present:  no more meat and no more ketchup.  As a vegetarian (vegan since February 14), I have tried many, many "loaf" recipes in search of one that would be delicious enough that there would be requests for it.  I have it on good authority that this loaf tastes excellent with ketchup (I wouldn't know, but I'll take his word for it), and it was suggested that this recipe would make great veggie burgers.  This recipe made 8 large-ish servings that were extremely filling.  Writing this blog is making me hungry for it all over again.  But anyway, I stole this recipe and changed a few things to make it my own.  Thanks, interweb!!!

Holiday Lentil Loaf (via vegweb.com)

1 onion, finely chopped
2 stalks celery, finely chopped
1-6 cloves garlic, finely chopped (I am a garlic fiend)
2 tsps dried sage
1 tsp onion powder
dash or two of liquid smoke
3 cups cooked lentils
3 cups cooked wild rice
1/2 cup chopped walnuts
1/4 cup breadcrumbs
2 Tbs white wine vinegar
2 Tbs flax seed powder mixed into 1/4 cup water
2 Tbs whole wheat flour
salt and pepper to taste

Yes, I have a french roaster shaped like a pumpkin.  Die with envy, people!
Saute onion, garlic and celery in frying pan until translucent.  I do not use oil, I use water or broth to keep things from sticking. 

Flax seed powder makes an excellent substitution for eggs in this recipe. 
The seeds work as a binding agent which is both high in fibre and nil on the cholesterol count.

Combine onion mixture with all ingredients in a large bowl and mix well. 

An oil sprayer is a great alternative to aerosol "Pam". 
Fill it with the oil of your choice, wash it between fills - no waste!
Line loaf pan with aluminium foil and spray with oil or use parchment paper.  Fill pan with mixture and press down.  Bake 30 minutes at 350F covered, then for an additional 10 minutes (or more) uncovered.

Let stand for 5-10 minutes before cutting and serving.

Holiday Lentil Loaf served with yams, corn and miso gravy.  So much better than the olden days of meat loaf!

This dish would come together very quickly if the cooked lentils and cooked wild rice were ready to go.  You can get both in cans, but would you really want to?
